Simply Perfect Pancakes!

Hi, everyone! This week has been absolutely crazy! There comes a time in everyone's career when their parents no longer have room for their junk. And that time came for me this weekend when I should have been writing a blog! :D
So I got back and I was tired of eating pasta, which I do probably 5 out of 7 days a week. And the only other thing I had in my kitchen was Bisquick, so I thought... PANCAKES! It's so easy, which is nice because no one in my life ever taught me to make pancakes.
For this recipe you need:
2 cups Bisquick or other baking mix
1 large egg
1 1/3 cups milk
2 tbsp sugar
1 tsp vanilla extract
1/4 tsp cinnamon
Mix all those ingredients together until smooth.
While mixing, heat up a pan to medium-high heat. I have this neat griddle pan I like to use. It's just flat but has a handle. Use whatever pan you have, as long as it's shallow enough and big enough to fit a pancake.
Drop batter onto heated pan, about 1/4 cup at a time, or as much as you want to make whatever size pancake you want AND can flip over.
Wait until bubbles form all over the top of the pancake to flip.
Flip, then remove from the pan when fully cooked. Butter.
They should look something like this:
Try topping with fruit and whipped cream! Yummmm!
