I love to cook and play around with flavors in the kitchen. Thing is, I almost never have exactly what the recipe calls for in the kitchen. Here's my take on a recipe I found on Pinterest.
1 or 2 avocados
1 box couscous
spaghetti sauce (any flavor)
1. Hardboil eggs. Cook couscous according to box instructions. (On the website recipe, it suggests adding cheese. I didn't because my couscous came with a parmesan flavor packet).
2. Peel and chop avocado(s).
3. Mix cooked couscous and avocado. Add hardboiled eggs, chopped or not (to your taste).
4. I wanted to add an acidic flavor. The website suggests lemon or lime juice AND tomatoes. I didn't have either, so I add some spaghetti sauce. Looks a little weird; tastes GREAT.
And the best part about this simple dish is that it's full of good fat from the avocados and protein from the eggs (though you could add some chicken if you wanted).
